A peculiar trait that immediately identifies this honey is its very strong, pungent, penetrating smell, very often likened to ammonia. The taste, however, is reminiscent of chamomile tea or even candies made with essential oils. The sensations perceived by smell and taste are pleasantly divergent.

After extraction by mechanical centrifugation, the honey is left to decant cold, then filtered and packaged. The processing temperature is always close to 30°C in order to preserve the taste, fragrance and main nutrients.

Recommendations for use

We recommend Dandelion honey paired with contrasting dishes. For example, it is excellent with cheeses low in salt but rich in flavour.

The plant

Taraxacum officinale, in the asteraceae family, is a perennial herbaceous plant with noted medicinal properties, also known as a “dandelion” or “common dandelion”. Solitary floral heads (10-15 cm) on a bald stem composed of yellow-gold ligulated flowers. It is widely found in low and medium mountain areas and grows in anthropised environments, stable meadows, orchards and vineyards up to 1,700 metres above sea level. Due to its early flowering period (February- May), bee families are not always sufficiently developed to exploit this resource. Therefore, producing this unifloral honey is very difficult and it must be harvested very early to prevent the dandelion nectar from mixing with subsequent harvests.
